Tomatillos bear prolifically and are known for being tolerant of extreme conditions from drought and heat farming to even cool nights. A tomatillo grows within a papery husk. The papery shell turns from light green to a dark purple and splits when they are ready.

Tomatillos have a sweet-tart flavor and are used is many Mexican dishes and are the main ingredient in many salsas and sauces.
